Spicy Tomato Mussel Pot

SERVES 6-8

Ingredients

  • 3.50 kg Whole mussels (local)
  • 200 g butter
  • 4 Onions, chopped
  • 8 Cloves garlic, minced
  • 1 Ginger finger, minced
  • 1 tbsp Turmeric
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 2 Chillies, deseeded and chopped
  • 4 Cans chopped tomato
  • 1 Punnet fresh basil
  • 1 tbsp Sugar
  • 1 Baguette


Method

  1. Heat a potjie/small pot over moderate coals, add the mussels, a splash of water, and then steam the mussels until they open up. Discard any closed ones and keep the water they steamed in.
  2. Next, in a separate potjie/small pot, sauté the onions, garlic, and ginger in the butter; then add all the spices and the tomato. Simmer for about 20 minutes and then add the chopped basil and sugar, and season to taste.
  3. Add about 200ml of the water, then add the mussels and simmer for about 5 minutes.
  4. Serve hot, garnished with basil leaves, black pepper, and fresh bread on the side.
